      I’m going through classic but want to retain the feel of not being held by your hand and shown exactly where to go. Is there a way to just have the guide up (ie it says to work on this quest next) but not have any waypoints or icons on the world map that spoil where to do the quests?

        yes you can disable the automatic waypoint arrow from the settings menu and the quest POI from the minimap tracking menu
